Preparing the Skewers

Marinate the Beef

In a bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Add the beef tenderloin cut into 1-inch cubes and marinate for at least 30 minutes.

Assemble the Skewers

Thread the marinated beef cubes onto the skewers. Preheat the grill to medium-high heat.

Grill the Skewers

Grill the skewers for about 8-10 minutes, turning occasionally, until cooked to your desired doneness.

Making the Amogio Sauce

Combine Ingredients

In a bowl, mix together chopped parsley, minced garlic, red wine vinegar, olive oil, salt, and pepper until well combined.

Preparing the Parmesan Fries

Prepare the Potatoes

Preheat the oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, and pepper in a large bowl.

Bake the Fries

Spread the fries in a single layer on a baking sheet and bake for 25-30 minutes until golden and crispy, flipping halfway through.

Add Parmesan

Remove the fries from the oven and sprinkle with grated Parmesan cheese. Return to the oven for an additional 5 minutes to melt the cheese.

Garnish and Serve

Garnish the fries with chopped parsley before serving.
