Vodka Tomato Cream Sauce

Method

Prepare Shrimp

    Marinate the Shrimp

    In a bowl, combine the olive oil, minced garlic, salt, black pepper, and lemon juice. Add the shrimp and toss to coat. Marinate for 15-20 minutes.

    Grill the Shrimp

    Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers and grill for about 2-3 minutes on each side until pink and cooked through.

Cook Garganelli

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the garganelli pasta and cook according to package instructions until al dente. Drain and set aside.

Make Vodka Tomato Cream Sauce

    Sauté the Aromatics

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for another minute.

    Add Tomatoes and Vodka

    Stir in the crushed tomatoes and vodka. Simmer for 10-15 minutes, allowing the alcohol to cook off.

    Finish the Sauce

    Reduce heat and stir in the heavy cream, Parmesan cheese, basil, salt, and black pepper. Cook for an additional 5 minutes until creamy and heated through.

Combine and Serve

    Toss Pasta and Sauce

    In a large serving bowl, combine the cooked garganelli with the vodka tomato cream sauce. Toss to coat evenly.

    Top with Grilled Shrimp

    Arrange the grilled shrimp on top of the pasta and sauce. Garnish with additional basil and Parmesan, if desired. Serve immediately.
