Seared Jumbo Asparagus

Filet Mignon

    Prepare the Steaks

    Season the filet mignon steaks with salt and black pepper on both sides.

    Sear the Steaks

    Heat olive oil in a skillet over medium-high heat. Add the steaks and sear for 4-5 minutes on each side for medium-rare. Add butter to the pan during the last minute for extra flavor.

    Rest the Steaks

    Remove the steaks from the skillet and let them rest for 5 minutes before serving.

Wild Mushroom Risotto

    Sauté the Aromatics

    In a large saucepan, heat olive oil over medium heat. Add chopped onion and cook until translucent. Add minced garlic and cook for another minute.

    Cook the Mushrooms

    Add the wild mushrooms to the saucepan and cook until softened, about 5-7 minutes.

    Add the Rice

    Stir in the Arborio rice and cook for 1-2 minutes until slightly translucent.

    Deglaze with Wine

    Pour in the white wine and stir until fully absorbed.

    Add Broth Gradually

    Begin adding the warm broth, one ladle at a time, stirring frequently. Wait until the liquid is absorbed before adding more. Continue until the rice is creamy and al dente, about 20-25 minutes.

    Finish the Risotto

    Stir in grated Parmesan cheese, salt, and black pepper. Adjust seasoning to taste.

    Prepare the Asparagus

    Trim the ends of the asparagus and rinse under cool water.

    Heat olive oil in a skillet over medium-high heat. Add the asparagus, season with salt and black pepper, and cook for 3-5 minutes until tender and slightly charred.
