Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from oven and let it cool.

Make the Cheesecake Filling
In a large bowl, beat the softened cream cheese with the remaining 1/2 cup of granulated sugar and vanilla extract until smooth and creamy. Add sour cream and mix until fully incorporated.

Combine and Bake
Pour the cream cheese mixture over the cooled crust, smoothing it out evenly. Bake in the preheated oven for 45-50 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about 1 hour.

Chill and Serve
After cooling, refrigerate the cheesecake for at least 4 hours or overnight. Before serving, top with sliced fresh strawberries mixed with powdered sugar. Slice and enjoy!
