Prepare the Chicken

Preheat your oven to 425°F (220°C). Pat the whole chicken dry with paper towels and place it in a roasting pan.

Season the Chicken

In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper. Rub this mixture all over the chicken, ensuring it’s well coated.

Prepare the Vegetables

In another bowl, toss the sliced onions and halved cherry tomatoes with a little olive oil, salt, and pepper. Arrange them around the chicken in the roasting pan.

Roast the Chicken

Roast the chicken in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with the juices in the pan halfway through cooking.

Add Cheese

During the last 10 minutes of roasting, top the chicken with slices of fresh mozzarella and crumbled goat cheese. Return to the oven to allow the cheese to melt.

Serve

Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. Serve with the caramelized onions and roasted tomatoes.
