Method

Prepare Skewers

Marinate the Tenderloin

In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and black pepper. Cut the beef tenderloin into 1-inch cubes and add to the marinade. Toss to coat and let it marinate for 30 minutes.

Skewer the Meat

Thread the marinated beef cubes onto the wooden skewers, leaving a bit of space between each piece.

Make Amogio Sauce

Combine Ingredients

In a small bowl, mix together chopped parsley, red wine vinegar, olive oil, minced garlic, salt, and black pepper. Set aside.

Prepare Parmesan Fries

Cut and Season Potatoes

Preheat the oven to 425°F (220°C). Cut the russet potatoes into fries and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt, black pepper, and dried oregano. Toss to coat.

Bake the Fries

Bake in the preheated oven for about 25-30 minutes or until golden brown and crispy. Remove from the oven and sprinkle grated parmesan cheese over the fries while they're still hot.

Preheat a grill to medium-high heat. Grill the skewers for about 8-10 minutes, turning occasionally, until the meat is cooked to your desired doneness.
