Directions
- 1
Prepare the Chicken
Season the chicken breasts with salt and black pepper. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
- 2
Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip in the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
- 3
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Add the breaded chicken and cook until golden brown on both sides and cooked through, about 5-7 minutes per side. Remove from skillet and place on a paper towel to drain excess oil.
- 4
Assemble the Dish
Preheat your oven to 400°F (200°C). In a baking dish, spread a layer of marinara sauce on the bottom. Place the fried chicken on top, then spoon more marinara sauce over each piece. Sprinkle with mozzarella and Parmesan cheese.
- 5
Bake
Bake in the preheated oven for about 20 minutes, or until the cheese is bubbly and golden.
- 6
Serve
Garnish with fresh basil, if desired, and serve hot with pasta or a side salad.
