Cook the Pasta
Bring a large pot of salted water to a boil. Add the garganelli pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Prepare the Sauce
In a large skillet over medium heat, add the pancetta and cook until it becomes crispy. Add the wild mushrooms and sauté for about 5 minutes until they are tender.

Deglaze and Creamify
Pour in the white wine and let it reduce by half. Then add the heavy cream and stir well. Allow the sauce to simmer for a few minutes until thickened. Season with salt and black pepper.

Combine Pasta and Sauce
Add the cooked garganelli to the skillet and toss to coat with the sauce. If the sauce is too thick, add some reserved pasta water until desired consistency is achieved.

Serve
Serve the pasta in bowls, topped with grated Parmesan cheese and a fried egg on each portion. Garnish with additional black pepper if desired.
