Plant-Based Meat Ragout

Sauté the Aromatics
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion, minced garlic, diced carrot, and diced celery. Sauté until the vegetables are soft, about 5-7 minutes.

Cook the Plant-Based Meat
Add the plant-based ground meat to the skillet and cook, breaking it up with a spoon, until browned, about 5 minutes.

Add Tomatoes and Seasonings
Stir in the canned diced tomatoes, tomato paste, vegetable broth, oregano, basil, salt, and black pepper. Bring to a simmer and cook for 20 minutes, stirring occasionally.
Marinara Sauce

Prepare the Marinara
In a separate saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Combine with Tomatoes
Add the canned diced tomatoes, fresh basil, salt, and black pepper. Simmer for 15 minutes, stirring occasionally.
Cooking the Pasta

Boil the Bucatini
In a large pot, bring salted water to a boil. Add the bucatini pasta and cook according to package instructions until al dente. Drain and set aside.
Assembly

Combine and Serve
In a large serving bowl, combine the cooked bucatini with the plant-based meat ragout and marinara sauce. Toss to combine and serve hot.
