- 1
Prepare the crust
Preheat the oven to 350°F (175°C). In a food processor, crush the Oreo cookies into fine crumbs. Melt the butter and mix it with the cookie crumbs until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from the oven and allow to cool.
- 2
Make the cheesecake filling
In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and continue to beat until creamy. Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Fold in the crumbled Oreo cookies.
- 3
Combine and bake
Pour the cheesecake filling over the cooled Oreo crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.
- 4
Cool and serve
After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight. Carefully remove the springform pan, slice, and serve chilled.
