Make the Dough
In a large bowl, mix together the flour, sugar, and salt. Add the egg, wine or vinegar, and softened butter. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a medium bowl, combine the drained ricotta cheese, powdered sugar, vanilla extract, and chocolate chips. Mix until well blended and smooth.

Roll Out the Dough
Divide the dough into small pieces. Roll each piece out on a floured surface until very thin.

Fry the Cannoli Shells
Cut the rolled dough into circles and wrap them around cannoli tubes. Heat vegetable oil in a deep pan over medium heat. Fry the wrapped dough until golden brown. Remove and drain on paper towels.

Fill the Cannoli
Once the shells are cooled, carefully remove them from the tubes. Use a piping bag to fill each shell with the ricotta mixture.

Serve
Dust the filled cannoli with powdered sugar before serving.
