Add Citric Acid
Dissolve the citric acid in a small amount of water and then add it to the warm milk. Stir gently for about 30 seconds.

Add Rennet
Dilute the rennet in a small amount of water and add it to the milk. Stir gently for 30 seconds, then stop stirring and allow it to sit undisturbed for 5-10 minutes until curds form.

Cut the Curds
Once curds have formed, cut them into 1-inch cubes with a long knife. Allow them to rest for 5 minutes.

Heat the Curds
Slowly heat the curds to 105°F (40°C) while gently stirring. This should take about 5-10 minutes.

Drain the Curds
Using a slotted spoon, transfer the curds into a colander lined with cheesecloth. Allow the whey to drain for about 5 minutes.

Knead and Stretch
Transfer the curds to a bowl, sprinkle with salt, and knead the curds together. Heat some ice water in a pot until hot (not boiling), then dip the curds into the hot water for about 30 seconds to soften. Stretch the curds and form into balls. Repeat until the desired texture is achieved.

Cool and Store
Place the mozzarella balls in a bowl of ice water to cool. Once cooled, store them in a container with some of the whey or in a saltwater brine.
