Marinate Chicken
In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 2 hours, or overnight for best results.

In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper. Set aside.

Fry Chicken
Heat the canola oil in a large, deep skillet over medium-high heat. Take the marinated chicken from the refrigerator and let excess buttermilk drip off. Dredge each piece in the seasoned flour, coating evenly. Fry the chicken in batches for 6-8 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

In a mixing bowl, combine cream cheese, sharp cheddar cheese, mayonnaise, diced pimentos, garlic powder, salt, and black pepper. Mix until well combined and creamy. Chill until ready to use.

In a small saucepan over low heat, combine honey and red chili flakes. Stir until the honey is warm and the chili flakes are infused. Remove from heat and let cool slightly.

Assemble Sandwich
Spread a generous layer of pimento cheese on the bottom half of each burger bun. Top with a fried chicken piece, a few pickles, and a lettuce leaf. Drizzle with hot honey before placing the top half of the bun. Serve immediately.
