Oven Roasted Salmon

Prepare the Salmon
Preheat your oven to 400°F (200°C).

Roast the Salmon
Place the seasoned salmon fillets on a baking sheet lined with parchment paper. Roast in the preheated oven for about 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.
Parmesan Risotto

Prepare the Broth
In a saucepan, heat the chicken broth over low heat. Keep it warm but do not boil.

Deglaze with Wine
Pour in the dry white wine and stir until it's mostly absorbed.

Add Broth Gradually
Begin adding the warm chicken broth, one ladle at a time, stirring frequently. Wait until the broth is mostly absorbed before adding the next ladle. This process should take about 18-20 minutes.

Finish the Risotto
Once the rice is creamy and al dente, stir in the grated parmesan cheese, salt, and black pepper. Remove from heat and let it sit for a minute.
Asparagus

Prepare the Asparagus
Trim the tough ends off the asparagus. Rinse and pat dry.

Season and Roast
Toss the asparagus with olive oil, salt, and black pepper. Spread them on a baking sheet and roast in the oven (alongside the salmon) for about 10-12 minutes until tender.
Basil Pesto

Blend the Ingredients
In a food processor, combine fresh basil leaves, pine nuts, minced garlic, and grated parmesan cheese. Blend until smooth.

Add Olive Oil
With the processor running, gradually add olive oil until the pesto reaches your desired consistency. Season with salt to taste.
