    Prepare the Trout

    Rinse the mountain trout fillets under cold water and pat them dry with paper towels. Brush both sides of the fillets with olive oil and season with salt and black pepper.

    Grill the Trout

    Preheat the grill to medium-high heat. Place the seasoned trout fillets on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and keep warm.

    Sauté the Spinach

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add the spinach and cook, stirring, until wilted (about 2-3 minutes). Season with salt to taste.

    Prepare Creamy Orzo

    In a separate pot, cook orzo according to package instructions until al dente. Drain and return to pot. Stir in 1 tablespoon of butter and a splash of pasta water to create a creamy consistency.

    Make Parsley Lemon Butter

    In a small saucepan, melt the remaining butter over low heat. Stir in chopped parsley, lemon juice, and lemon zest. Keep warm.

    Assemble the Dish

    On each plate, place a generous portion of sautéed spinach followed by the creamy orzo. Top with grilled trout fillet and drizzle with parsley lemon butter before serving.
