    Prepare the Shrimp

    Rinse the peeled and deveined shrimp under cold water and pat dry with paper towels. Season the shrimp with salt, black pepper, and garlic powder in a mixing bowl.

    Bread the Shrimp

    In a shallow bowl, place the cornstarch. In another bowl, beat the egg. In a third bowl, place the panko breadcrumbs. Dredge each shrimp first in cornstarch, then dip it in the beaten egg, and finally coat it with the panko breadcrumbs. Set aside on a plate.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it bubbles and browns quickly, the oil is ready.

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil in batches, avoiding overcrowding the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to transfer the fried shrimp to a paper towel-lined plate to drain excess oil.

    Arrange the crispy fried shrimp on a serving platter and serve immediately with a cup of sweet Thai chili sauce for dipping.
