Fish Preparation

    Prepare the Battering Mixture

    In a large bowl, whisk together flour, cornstarch, baking powder, salt, black pepper, and beer or sparkling water until smooth.

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered fish into the hot oil, cooking for 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.

    Mix the Coleslaw Ingredients

    In a large bowl, combine shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss well until the vegetables are evenly coated.

    Cover the coleslaw and refrigerate for at least 30 minutes to allow flavors to meld.

    In a small bowl, mix together mayonnaise, chopped pickles, lemon juice, chopped capers, salt, and black pepper until well combined.

Assemble the Sandwich

    Lightly toast the brioche buns on a skillet or in a toaster until golden brown.

    Spread a generous amount of tartar sauce on the bottom half of each bun. Place a crispy fish fillet on top, followed by a scoop of coleslaw. Top with the other half of the bun.
