Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

Coat the Calamari
Dredge the calamari rings in the flour mixture, ensuring they are fully coated. Shake off excess flour.
Frying

Heat Oil
In a deep pan or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in small batches. Fry for 2-3 minutes or until golden brown and crispy.

Drain Excess Oil
Using a slotted spoon, remove the calamari from the oil and place them on paper towels to drain excess oil.
Chili Aioli Preparation

In a small bowl, combine mayonnaise, chili paste, minced garlic, and lemon juice. Mix until smooth and well combined.
Serving

Serve the crispy calamari hot with a side of chili aioli and garnish with lemon wedges.
