Preparation of Base

    Boil Water

    In a large pot, bring the 4 cups of water to a boil over medium-high heat.

    Add Sugars

    Once boiling, add 1 cup of sugar and 1 cup of brown sugar. Stir until completely dissolved.

    Add Yeast

    Remove the pot from heat and let it cool down to about 100°F (37°C). Once cooled, stir in 1 tsp of yeast and let it sit for about 10 minutes until frothy.

    Add Vanilla

    Stir in 1 tsp of vanilla extract into the mixture.

Flavoring the Rootbeer

    Add Flavoring Ingredients

    In a separate pot, combine 1 tbsp of sarsaparilla root, 1 tbsp of wintergreen leaves, 1 tbsp of licorice root, 1 tsp of fennel seeds, 1 cinnamon stick, and 1 tsp of cloves with 2 cups of water. Bring to a simmer and let cook for 15 minutes.

    Strain Flavoring

    After simmering, strain the mixture to remove solids and add the liquid to the yeast mixture.

    Combine with Carbonation

    In a large pitcher, combine the flavored mixture with 4 cups of carbonated water. Stir gently to combine.

    Bottle and Ferment

    Pour the rootbeer into clean bottles, leaving a little space at the top. Seal the bottles and let them sit at room temperature for 2-3 days for carbonation.
