Method
Grilled Salmon
- 1
Prepare the Marinade
In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, black pepper, and fresh dill. This will be used to marinate the salmon.
- 2
Marinate the Salmon
Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well coated. Cover and refrigerate for at least 30 minutes.
- 3
Grill the Salmon
Preheat the grill to medium-high heat. Remove the salmon from the marinade and discard any remaining marinade. Place the salmon on the grill, skin side down, and cook for about 4-6 minutes. Flip and cook for another 4-6 minutes or until the salmon is cooked through and flakes easily with a fork.
Asparagus
- 4
Prepare the Asparagus
Wash and trim the ends off the asparagus. Place them in a bowl and drizzle with olive oil, salt, black pepper, and lemon zest. Toss to coat.
- 5
Grill the Asparagus
In the last 5 minutes of grilling the salmon, place the asparagus on the grill. Cook for 3-5 minutes, turning occasionally until tender and slightly charred.
Garlic Mashed Potatoes
- 6
- 7
Cook the Potatoes
Once boiling, reduce the heat to medium and simmer until the potatoes are fork-tender, about 15-20 minutes. In the last 5 minutes of cooking, add the garlic cloves to the pot.
- 8
Mash the Potatoes
Drain the potatoes and garlic and return them to the pot. Add the butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
