Preparing the Calamari

Soak the Calamari
In a medium bowl, pour the buttermilk over the calamari rings. Ensure all the rings are submerged and let them soak for at least 30 minutes in the refrigerator.

Prepare the Breading
In a shallow dish, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to combine.

Bread the Calamari
Remove the soaked calamari rings from the buttermilk, allowing excess to drip off. Dredge each ring in the flour mixture, ensuring they are fully coated. Shake off any excess flour.

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, being careful not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and transfer them to a plate lined with paper towels to drain excess oil.

Combine Ingredients
Add the crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper to the saucepan. Stir to combine and bring the mixture to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15 minutes, stirring occasionally. Adjust seasoning to taste.

Finish with Basil
Stir in the chopped fresh basil just before serving.
