Crust Preparation

    Preheat the oven

    Preheat your oven to 350°F (175°C).

    Prepare the crust mixture

    In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix well until the crumbs are evenly coated with the butter.

    Press the crust into a pan

    Pour the crust mixture into a 9-inch springform pan. Press the mixture firmly into the bottom and slightly up the sides of the pan to form an even layer.

    Bake the crust

    Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove from the oven and set aside to cool.

Filling Preparation

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.

    Add sugar and sour cream

    Gradually add the granulated sugar and mix until well combined. Then, add the sour cream and vanilla extract, mixing until smooth.

    Incorporate the eggs

    Add the eggs one at a time, mixing on low speed after each addition just until combined. Be careful not to overmix.

    Pour the filling into the crust

    Pour the cream cheese filling into the cooled graham cracker crust, smoothing out the top with a spatula.

    Bake the cheesecake

    Bake the cheesecake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. The edges should be firm.

    Cool and refrigerate

    Turn off the oven and crack the door. Let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.
