Directions

  1. 1

    Prepare the Duck

Season the duck breasts with salt and black pepper on both sides. Heat olive oil in a skillet over medium-high heat.

  2. 2

    Cook the Duck

Place the duck breasts skin-side down in the hot skillet. Sear for about 6-8 minutes until the skin is crispy and golden brown. Flip and cook for another 4-5 minutes for medium-rare. Remove from skillet and let rest.

  3. 3

Make the Wild Rice Soup Base

In a large pot, add the chopped onion, diced carrots, and diced celery. Sauté over medium heat until the vegetables are tender, about 5-7 minutes.

  4. 4

    Add Aromatics

Add the minced garlic, dried thyme, and bay leaf to the pot. Cook for an additional 1-2 minutes until fragrant.

  5. 5

    Cook the Wild Rice

Stir in the wild rice, then add the chicken broth. Bring the mixture to a boil, then reduce to a simmer. Cover and cook for about 40-45 minutes until the rice is tender.

  6. 6

    Finish the Soup

Once the rice is cooked, stir in the heavy cream and let it simmer for an additional 5-10 minutes. Remove the bay leaf.

  7. 7

    Slice the Duck

While the soup is finishing, slice the rested duck breast into thin strips.

  8. 8

    Serve

Ladle the wild rice soup into bowls. Top with sliced smoked duck and garnish with chopped parsley. Enjoy your cozy meal!
