    Prepare the Ingredients

    Start by dicing the potatoes, chopping the onion, and bell pepper, and mincing the garlic.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 10-15 minutes, stirring occasionally until they are golden and tender.

    Cook the Chorizo

    In the same skillet, push the cooked potatoes to one side and add the chorizo sausage. Break it apart with a spatula and cook until browned and fully cooked, about 5-7 minutes.

    Add Aromatics

    Add the chopped onion, bell pepper, and minced garlic to the skillet. Stir everything together and cook for an additional 5 minutes until the vegetables are softened.

    Make the Hash Patty

    In a bowl, crack the eggs and beat them lightly. Pour the beaten eggs over the chorizo and vegetable mixture in the skillet. Stir gently to combine and allow the eggs to set for about 3-4 minutes, forming a cohesive patty.

    Season and Serve

    Sprinkle paprika over the top for added flavor. Once the eggs have fully set, remove from heat. Serve hot, optionally with Papas Bravas sauce on the side.
