Prepare the Gelatin
In a small bowl, combine the cold water and gelatin. Let it sit for about 5 minutes to bloom.

Heat the Cream and Milk
In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir occasionally until the mixture is hot but not boiling.

Add Gelatin
Remove the saucepan from heat and stir in the bloomed gelatin until fully dissolved.

Incorporate Pumpkin and Spices
Add the pumpkin puree, pumpkin spice, vanilla extract, and a pinch of salt to the mixture. Whisk until smooth and well combined.

Pour into Molds
Pour the mixture into individual serving cups or molds. Allow to cool at room temperature for about 30 minutes.

Chill
Transfer the cups or molds to the refrigerator and chill for at least 4 hours, or until set.

Once set, gently run a knife around the edges of the panna cotta to loosen it, if serving from a mold. Invert onto a plate or serve directly in the cups. Enjoy!
