    Prepare the Crust

    Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and melted unsalted butter. Mix until the crumbs are well-coated. Press this mixture into the bottom of a 9-inch springform pan to form an even layer.

    Bake the Crust

    Place the crust in the preheated oven and bake for 8-10 minutes until lightly golden. Remove from the oven and set aside to cool.

    Make the Cheesecake Filling

    In a large mixing bowl, beat the cream cheese with granulated sugar until smooth and creamy. Add in the sour cream, eggs, and vanilla extract. Mix until well combined.

    Incorporate the Cheese

    Gently fold in the Humboldt Fog cheese, which should be crumbled or cut into small pieces. Ensure it is evenly distributed throughout the mixture.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.

    After an hour, remove the cheesecake from the oven. Allow it to cool to room temperature before transferring it to the refrigerator. Chill for at least 4 hours, preferably overnight, before serving.
