Marinating Chicken

Marinate the Chicken

In a bowl, mix the jerk seasoning, olive oil, and lime juice. Add the chicken thighs, coat well, and let marinate in the refrigerator for at least 1 hour.

Preparing Skewers

Prepare the Skewers

While the chicken is marinating, cut the peaches, red onion, and bell peppers into chunks. Thread the chicken, peaches, red onion, and bell peppers onto the skewers alternately.

Cooking Rice

Cook Coconut-Ginger Rice

In a saucepan, combine coconut milk, water, rice, grated ginger, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until rice is cooked and liquid is absorbed.

Grilling Skewers

Grill the Skewers

Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Making Sauce

Prepare Spicy Jerk Sauce

In a small bowl, mix together jerk seasoning, honey, lime juice, and water until well combined.

Serve the grilled skewers over a bed of coconut-ginger rice and drizzle with spicy jerk sauce.
