Soup Preparation

    Sauté Onions

    In a large cast-iron pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized (about 25-30 minutes).

    Add Garlic & Wine

    Stir in the minced garlic and cook for an additional 1-2 minutes. Then, pour in the white wine and let it simmer until reduced by half.

    Add Broth & Seasonings

    Add the beef broth, bay leaves, thyme, salt, and black pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.

    Prepare Baguette

    While the soup is simmering, preheat your oven to 350°F (175°C). Slice the French baguette into thick slices and place them on a baking sheet. Toast in the oven for about 10 minutes, or until golden brown.

    Assemble & Broil

    Remove the bay leaves from the soup. Ladle the soup into oven-safe crocks, place a slice of toasted baguette on top of each, and sprinkle generously with Gruyère cheese. Place the crocks under the broiler for about 3-5 minutes, or until the cheese is bubbly and golden.

    Serve

    Carefully remove the crocks from the oven and let cool slightly before serving. Enjoy your delicious French onion soup!
