    Prepare the Eggplant

    Slice the eggplants into 1 cm thick filets. Sprinkle salt on both sides and let sit for about 30 minutes to draw out moisture. Rinse and pat dry.

    Preheat the Oven

    Preheat your oven to 190°C (375°F).

    Cook the Eggplant

    In a skillet, heat the olive oil over medium heat. Add the eggplant slices and cook for about 3-4 minutes on each side until golden brown. Remove and set aside.

    Layering

    In a baking dish, spread a layer of tomato sauce at the bottom. Place a layer of eggplant slices on top, followed by a mix of the five cheeses (mozzarella, parmesan, ricotta, gorgonzola, and fontina). Repeat the layers until all ingredients are used, finishing with tomato sauce and a final layer of cheese.

    Bake the Dish

    Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

    Garnish and Serve

    Remove from the oven, let cool for a few minutes, garnish with fresh basil, and serve warm.
