    Prepare the Bordelaise Sauce

    In a saucepan, melt 1 tablespoon of butter and sauté the shallots until translucent. Add the red wine and reduce by half. Add the beef stock and simmer until thickened. Strain and whisk in the remaining butter until smooth.

    Cook the Filet Mignon

    Preheat the grill to high heat. Season the filet mignon with salt and black pepper. Brush with olive oil and grill for about 4-5 minutes on each side for medium-rare. Let rest for a few minutes before serving.

    Make the Mashed Potatoes

    Peel and chop the potatoes, then boil in salted water until tender. Drain and mash with milk and a tablespoon of butter until creamy. Season with salt and pepper to taste.

    Sauté the Spinach

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the spinach and cook until wilted. Season with salt and pepper.

    Plate the grilled filet mignon, top with the bordelaise sauce, and serve alongside mashed potatoes and sautéed spinach.
