Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips or wedges, about 1/4 inch thick.

Heat the Oil
In a large deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the soaked and dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

Season the Fries
While the fries are still hot, drizzle them with truffle oil and sprinkle with garlic powder, salt, chopped parsley, and grated Parmesan cheese. Toss to coat evenly.

Serve the truffle fries immediately while hot, garnished with additional parsley and Parmesan if desired.
