    Prepare the Batter

    In a mixing bowl, whisk together the chickpea flour, water, olive oil, salt, garlic powder, cumin, and black pepper until smooth and well combined.

    Cook the Batter

    Pour the batter into a greased baking dish or a parchment-lined tray, spreading it evenly. Bake in a preheated oven at 400°F (200°C) for about 25-30 minutes, or until the edges are golden brown and the center is set.

    Cool and Cut

    Remove the dish from the oven and let it cool for about 10 minutes. Once cooled, cut the batter into fries or desired shapes.

    Fry the Fries

    In a deep pan, heat enough oil for frying. Once the oil is hot, carefully add the chickpea fries in batches and fry until golden and crispy, about 3-4 minutes per side. Drain on paper towels.

    Serve

    Sprinkle the za'atar over the fries and serve hot with harissa aioli on the side.
