    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into long, thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove excess moisture.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, being careful not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown.

    Drain and Season

    Remove the fries from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, paprika, garlic powder, and black pepper to taste.

    Serve

    Serve the French fries hot with your favorite dipping sauces.
