    Prepare the Rack of Lamb

    Preheat your oven to 375°F (190°C). Rub the rack of lamb with olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and black pepper. Ensure it is evenly coated.

    Sear the Lamb

    In a hot skillet, sear the rack of lamb on all sides for 2-3 minutes until browned. This step enhances the flavor.

    Roast the Lamb

    Transfer the seared rack of lamb to a roasting pan and roast in the preheated oven for about 20-25 minutes for medium-rare. Use a meat thermometer to check for an internal temperature of 130°F (54°C).

    Rest the Lamb

    Remove the lamb from the oven and let it rest for 10 minutes before slicing.

    Prepare the Mint Jus

    In a saucepan, combine chopped mint leaves, chicken stock, and sugar. Bring to a simmer and reduce slightly, about 5-10 minutes. Strain and keep warm.

    Prepare the Raspberry Demi

    In another saucepan, combine raspberry puree and red wine. Simmer until reduced by half. Whisk in butter until melted and smooth.

    Slice the rack of lamb and serve it with your choice of mint jus or raspberry demi.
