    Sauté the Vegetables

    In a large pot, melt the butter over medium heat. Add the chopped onion, carrot, celery, and garlic. Sauté until the vegetables are soft, about 5-7 minutes.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for another 2 minutes. Then, pour in the white wine and bring to a simmer. Let it reduce for about 5 minutes.

    Add Stock and Lobster

    Add the seafood stock, thyme, bay leaf, and lobster meat to the pot. Bring to a boil, then reduce to a simmer for 15 minutes.

    Blend the Bisque

    Remove the bay leaf and use an immersion blender to puree the soup until smooth. You can also transfer it to a blender in batches if needed.

    Stir in Cream

    Return the bisque to low heat and stir in the heavy cream. Season with salt and pepper to taste. Heat through, but do not boil.

    Serve

    Ladle the bisque into bowls and garnish with additional lobster meat or fresh herbs if desired.
