    Prepare the Pork Shanks

    Season pork shanks with salt and black pepper. In a large Dutch oven, heat olive oil over medium-high heat. Sear the pork shanks on all sides until browned, about 8-10 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add minced garlic and cook for an additional minute.

    Add Tomatoes and Broth

    Stir in the canned diced tomatoes, beef broth, bay leaves, and fresh thyme. Bring to a simmer.

    Combine and Cook

    Return the seared pork shanks to the pot. Ensure they are submerged in the sauce. Cover the pot and transfer to a preheated oven at 325°F (160°C). Cook for 2.5 to 3 hours until the meat is fork-tender.

    Serve

    Remove the pot from the oven. Discard bay leaves. Serve the pork osso buco with the sauce spooned over the top and garnish with chopped parsley.
