    Prepare the Trout

    Rinse the rainbow trout fillets under cold water and pat them dry with paper towels. Place them in a shallow dish.

    Marinate

    In a small bowl, mix the olive oil, salt, black pepper, and lemon juice. Pour this mixture over the fillets and let them marinate for at least 15 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat. If using a charcoal grill, ensure the coals are hot and glowing.

    Grill the Trout

    Place the marinated trout fillets skin-side down on the grill. Cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.

    Prepare the Glaze

    While the fish is grilling, prepare the dill butter or rosemary toasted almond honey glaze. For dill butter, mix 1/4 cup softened butter with 2 tablespoons chopped fresh dill and a pinch of salt. For almond honey glaze, toast 1/2 cup sliced almonds in a pan, then mix with 1/4 cup honey and 1 tablespoon chopped fresh rosemary.
