For the Jalapeno Rings
Method
Instructions for Jalapeno Rings
- 1
Prepare the Jalapenos
Slice the jalapenos into 1/4 inch thick rings and remove the seeds if you prefer less heat. Set aside.
- 2
Make the Batter
In a large bowl, combine the all-purpose flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk together the eggs and milk. Pour the wet ingredients into the dry ingredients and mix until just combined.
- 3
Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).
- 4
Coat and Fry
Dip each jalapeno ring into the batter, allowing excess to drip off, and carefully place them in the hot oil. Fry in batches until golden brown, about 3-4 minutes per batch.
- 5
Drain and Serve
Remove the fried jalapeno rings with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot with sriracha ranch dipping sauce.
