    Prepare the Crawfish

    In a bowl, mix the crawfish tails with salt and black pepper. Let sit for 10 minutes.

    Breading the Crawfish

    In a separate bowl, combine the flour and cornmeal. In another bowl, whisk the eggs and milk together. Dip the seasoned crawfish into the egg mixture, then coat with the flour-cornmeal mixture.

    Frying the Crawfish

    Heat the vegetable oil in a deep pan over medium-high heat. Once hot, carefully add the breaded crawfish in batches and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

    Assemble the Po’boy

    Slice the French bread loaf lengthwise. Spread a generous amount of zesty cream sauce on the inside. Layer with lettuce, sliced tomato, and fried crawfish.
