    Prepare the Steak

    Season the Kansas City strip steak generously with salt and black pepper on both sides.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove the steak from the skillet and let it rest.

    Make the Demi Glaze

    In the same skillet, add beef stock and simmer on medium heat, scraping up any browned bits from the bottom of the pan. Reduce the liquid by half, then add butter to finish the sauce.

    Prepare the Fried Onion Strings

    Slice the onion into thin rings. In a bowl, combine flour and buttermilk. Dip the onion rings in the mixture, then fry in vegetable oil heated to 350°F (175°C) until golden brown and crispy. Drain on paper towels.

    Serve

    Slice the rested steak and serve with demi glaze drizzled over the top, garnished with fried onion strings.
