Preparing the Ingredients

    Prep the Potatoes

    Wash and cut the potatoes into cubes. Boil them in salted water for about 15 minutes or until tender, then drain and set aside.

    Prepare the Pole Beans

    Trim the ends of the pole beans and blanch them in boiling water for 3-4 minutes until bright green. Drain and immediately place them in ice water to stop cooking.

Making Bacon Aioli

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove and place on paper towels to drain. Reserve a tablespoon of the bacon fat.

    Blend the Aioli

    In a blender or food processor, combine the cooked bacon, mayonnaise, garlic, lemon juice, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.

Grilling the Bass

    Prepare the Grill

    Preheat your wood-fired grill to medium-high heat.

    Grill the Bass

    Season the bass fillets with salt and pepper. Brush with reserved bacon fat. Place them on the grill and cook for about 4-5 minutes per side, or until the fish flakes easily with a fork.

Serving the Dish

    On a plate, arrange the grilled bass, boiled potatoes, and pole beans. Drizzle with bacon aioli and serve immediately.
