Cake Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, salt, and sugar until well combined.

    Prepare Wet Ingredients

    In another bowl, beat together the eggs, milk, olive oil, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.

    Preheat Griddle

    Heat a griddle or non-stick skillet over medium heat and lightly grease with olive oil.

    Cook the Cakes

    Pour about 1/4 cup of batter onto the griddle for each cake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes until golden brown.

    Transfer the cooked cakes to a plate and cover to keep warm while you repeat with the remaining batter.

    In a medium bowl, combine mixed market berries with Prosecco and gently toss to coat. Let sit for 5 minutes to absorb flavors.
