Preparing the Pork Shoulder

    Marinate the Pork

    In a mixing bowl, combine olive oil, minced garlic, salt, black pepper, paprika, cumin, and lemon juice. Rub the mixture all over the pork shoulder and marinate for at least 1 hour, preferably overnight.

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F).

    Grill the Pork

    Place the marinated pork shoulder on the grill. Cook for about 5-6 minutes per side, or until the internal temperature reaches 190°F for tender, shreddable pork. Remove from grill and let rest for 10 minutes before slicing.

Preparing the Vegetables

    Toss the Vegetables

    In a bowl, combine the sliced goldbar squash, halved cherry tomatoes, and trimmed romano beans. Drizzle with olive oil, and season with salt and pepper. Toss to coat evenly.

    Grill the Vegetables

    Place the vegetable mixture in a grill basket or directly on the grill. Grill for about 10-15 minutes, turning occasionally, until they are tender and have grill marks.

Serving

    Plate the Dish

    Slice the grilled pork shoulder and serve it alongside the grilled vegetables. Enjoy!
