    Prepare the Chicken

    Preheat your grill or stovetop grill pan over medium-high heat. Rub the spatchcocked chicken with olive oil, salt, pepper, and minced garlic. Let it marinate for about 15 minutes.

    Cook the Chicken

    Place the chicken skin-side down on the grill. Weigh it down with a heavy cast-iron skillet or bricks wrapped in aluminum foil. Grill for about 15-20 minutes until the skin is crispy and golden brown.

    Flip and Finish Cooking

    Remove the weight and carefully flip the chicken. Grill for an additional 15-20 minutes or until the internal temperature reaches 165°F (75°C).

    Prepare the Vegetables

    In a separate pan, heat a tablespoon of olive oil over medium heat. Add the corn, okra, and sweet peppers. Sauté for about 5-7 minutes until tender. Season with salt, pepper, and fresh herbs.

    Once the chicken is done, let it rest for 5 minutes. Serve alongside the sautéed vegetables.
