Prepare the Beef
Wrap the beef tenderloin in plastic wrap and place it in the freezer for about 1 hour until firm. This will make it easier to slice thinly.

Slice the Beef
Once the beef is firm, remove it from the freezer and slice it as thinly as possible with a sharp knife. Arrange the slices on a large serving plate, slightly overlapping them.

Prepare the Peppers
Core and thinly slice the red bell pepper. Scatter the slices over the beef.

Add Cheese and Basil
Using a vegetable peeler, shave the pecorino cheese over the beef and peppers. Scatter the fresh basil leaves on top.

Season the Carpaccio
Drizzle the extra virgin olive oil over the dish. Season with sea salt and freshly cracked black pepper to taste.

Serve
Serve immediately as an appetizer or light main course.
