In a large bowl, toss the chicken wings with Cajun seasoning, salt, and pepper. Let them marinate for at least 30 minutes.

Heat vegetable oil in a deep fryer or large pot to 375°F (190°C). Fry the wings in batches until golden brown and crispy, about 10-12 minutes. Drain on paper towels.

In a large bowl, whisk together flour, cocoa powder, baking powder, sugar, and salt.

In another bowl, beat the eggs and then mix in buttermilk, vegetable oil, red food coloring, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Preheat your waffle iron and pour the batter according to the manufacturer's instructions. Cook until the waffles are crisp and cooked through, about 4-5 minutes.
