Fried Lobster & Cajun Grits

Preparation

    Prepare the Cajun Grits

    In a large saucepan, bring 4 cups of water to a boil. Stir in the corn grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened.

    Add Cream and Seasoning

    Once the grits are thick, stir in the heavy cream, 2 tablespoons of Cajun seasoning, and 2 tablespoons of butter. Mix well and keep warm.

    Prepare the Lobster

    While the grits are cooking, prepare the lobster tails by cutting them down the middle with kitchen shears, removing the meat from the shell while keeping it attached at the end.

    Breading the Lobster

    In a bowl, beat the eggs. In another bowl, combine the flour, salt, black pepper, and remaining Cajun seasoning. Dip each lobster tail in the flour mixture, then into the eggs, and back into the flour mixture.

    Fry the Lobster

    Heat olive oil in a deep skillet over medium heat. Once hot, carefully fry the lobster tails for about 3-5 minutes or until golden brown. Remove and drain on paper towels.

    Serve

    To serve, place a generous portion of Cajun grits on a plate and top with fried lobster tails. Optionally, serve with waffles on the side.
