Prepare the Crawfish Filling
In a large skillet, heat a bit of vegetable oil over medium heat. Add the chopped onion, bell pepper, celery, and garlic. Sauté until the vegetables are tender, about 5 minutes.

Add Crawfish and Seasoning
Stir in the crawfish tails, Cajun seasoning, salt, and pepper. Cook for 2 minutes.

Thicken the Filling
Sprinkle the flour over the mixture and stir well. Gradually add the chicken broth, stirring constantly until the mixture thickens, about 3-4 minutes.

Cool the Filling
Remove from heat and let the filling cool completely.

Assemble the Empanadas
Place a spoonful of the crawfish filling in the center of each empanada dough disc. Fold the disc in half and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

Fry the Empanadas
Heat vegetable oil in a deep frying pan over medium-high heat. Fry the empanadas in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
