Prepare the Boudin Mixture
In a large bowl, mix the boudin sausage, cooked white rice, chopped green onions, garlic powder, onion powder, black pepper, and cayenne pepper until well combined.

Form the Balls
Using your hands, shape the mixture into small balls, about the size of a golf ball. Place them on a baking sheet lined with parchment paper.

Coat the Balls
Dip each ball into the beaten eggs, then roll them in breadcrumbs until fully coated.

Heat the Oil
In a large pot or deep fryer, heat the oil to 350°F (175°C).

Fry the Boudin Balls
Carefully place the coated boudin balls into the hot oil in batches. Fry for about 4-5 minutes or until golden brown and crispy. Remove from oil and drain on paper towels.

Serve with Cajun Mayo
Serve the boudin balls hot with a side of Cajun mayo for dipping.
