Combine Ingredients
Mix the crumbled boudin with cooked white rice, chopped green onions, minced garlic, cajun seasoning, salt, and black pepper until well combined.

Assemble Eggrolls
Take an eggroll wrapper and place about 2 tablespoons of the filling in the center. Fold the bottom corner over the filling, then fold the sides in and roll tightly. Seal the edge with a bit of water.

Fry the Eggrolls
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C). Fry the eggrolls in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Serve hot with your favorite dipping sauce.
